Ingredients:

For the Donuts:

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar substitute (e.g., Swerve, Stevia, Monk Fruit)
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup non-fat Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

  • 2 tablespoons granulated sugar substitute
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray.
  2. Prepare Dry Ingredients:
    • In a bowl, whisk together the flour, sugar substitute, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In another bowl, whisk together the applesauce, Greek yogurt, egg, and vanilla extract.
  4. Mix Batter:
    • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Fill Donut Pan:
    • Spoon the batter into a piping bag or a plastic bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
