Weight Watchers Creamy Tuscan Chicken Pasta Recipe

Ingredients:

  • 8 oz (about 225g) whole wheat or multi-grain pasta
  • 1 lb (about 450g) boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup low-fat cream cheese
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
  5. Stir in spinach and sun-dried tomatoes, and cook until spinach wilts.
  6. Reduce heat to low, add cream cheese, chicken broth, Parmesan cheese, and dried herbs. Stir until the cream cheese is melted and the sauce is well combined.
  7. Add the cooked chicken back to the skillet and stir to coat the chicken with the creamy sauce.
  8. Season with salt and pepper to taste.
  9. Add the cooked pasta to the skillet and toss until everything is well coated in the creamy sauce.
  10. Garnish with fresh parsley if desired.
