Ingredients:
- 2 cups frozen shredded hash browns, thawed
- 1 cup diced cooked ham (lean)
- 1 cup diced bell peppers (assorted colors)
- 1 cup diced onions
- 1 cup reduced-fat shredded cheddar cheese
- 1 cup fat-free milk
- 4 large eggs
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the thawed hash browns, diced ham, bell peppers, onions, and half of the shredded cheese. Mix well.
- In a separate bowl, whisk together the milk and eggs. Season with salt and pepper to taste.
- Pour the egg mixture over the hash brown mixture and stir until everything is well coated.
- Lightly coat a casserole dish with cooking spray.
- Pour the mixture into the casserole dish, spreading it evenly.
- Sprinkle the remaining shredded cheese on top.
- Bake in the preheated oven for about 35-40 minutes or until the center is set and the top is golden brown.
- Allow the casserole to cool for a few minutes before slicing.
