Weight watchers farmers casserole

Ingredients:

  • 2 cups frozen shredded hash browns, thawed
  • 1 cup diced cooked ham (lean)
  • 1 cup diced bell peppers (assorted colors)
  • 1 cup diced onions
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 cup fat-free milk
  • 4 large eggs
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the thawed hash browns, diced ham, bell peppers, onions, and half of the shredded cheese. Mix well.
  3. In a separate bowl, whisk together the milk and eggs. Season with salt and pepper to taste.
  4. Pour the egg mixture over the hash brown mixture and stir until everything is well coated.
  5. Lightly coat a casserole dish with cooking spray.
  6. Pour the mixture into the casserole dish, spreading it evenly.
  7. Sprinkle the remaining shredded cheese on top.
  8. Bake in the preheated oven for about 35-40 minutes or until the center is set and the top is golden brown.
  9. Allow the casserole to cool for a few minutes before slicing.
  10. Serve warm and enjoy!
