Weight Watchers-friendly blueberry muffin

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup sugar or a sugar substitute like Stevia
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup non-fat plain Greek yogurt
  • 2 large eggs
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar (or sugar substitute), baking powder, baking soda, and salt. Mix these dry ingredients together.
  3. In a separate bowl, whisk together the Greek yogurt, eggs, applesauce, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
  5. Gently fold in the blueberries into the muffin batter.
  6. Divide the batter evenly among the muffin cups.
  7. Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
