Ingredients:
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup sugar or a sugar substitute like Stevia
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup non-fat plain Greek yogurt
- 2 large eggs
- 2 tablespoons unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sugar (or sugar substitute), baking powder, baking soda, and salt. Mix these dry ingredients together.
- In a separate bowl, whisk together the Greek yogurt, eggs, applesauce, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the blueberries into the muffin batter.
- Divide the batter evenly among the muffin cups.
- Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
