Pizza Monkey Bread

Ingredients:
For the Dough:
1 can (16 oz) reduced-fat refrigerated biscuit dough (or use whole wheat or any preferred biscuit dough)
1 tablespoon olive oil (or cooking spray)
For the Pizza Filling:
- 1 cup shredded mozzarella cheese (part-skim for a lighter option)
- 1/2 cup mini pepperoni slices (or turkey pepperoni for a lighter version)
- 1/4 cup grated Parmesan cheese (optional)
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian seasoning (or dried oregano)
- 1/4 teaspoon red pepper flakes (optional, for a little heat)
For the Pizza Sauce:
- 1/2 cup pizza sauce (low-sugar, or make your own with crushed tomatoes, garlic, and herbs)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Grease a bundt pan or a 9×9-inch baking dish with cooking spray or olive oil.
2. Prepare the Biscuit Dough:
- Open the can of biscuit dough and cut each biscuit into quarters. You can do this by simply cutting each biscuit into 4 pieces with a knife or kitchen scissors.
- In a large bowl, combine the dough pieces with olive oil, making sure they are lightly coated.
3. Add Pizza Fillings:
- In a separate small bowl, mix together the shredded mozzarella, mini pepperoni, Parmesan cheese (if using), garlic powder, Italian seasoning, and red pepper flakes.
- Add the cheese and pepperoni mixture to the dough pieces. Toss gently to distribute the pizza fillings evenly among the dough pieces.
4. Layer the Monkey Bread:
- Layer the dough and filling mixture into the greased bundt pan or baking dish. Press the dough down gently as you go to create an even layer.
5. Bake:
- Once all the dough pieces are layered, place the pan in the oven and bake for 20-25 minutes, or until the monkey bread is golden brown and cooked through. Keep an eye on it to avoid overbaking.

- While the monkey bread is baking, warm the pizza sauce in a small saucepan or microwave.
