Weight Watchers-Friendly Stuffed Pepper Casserole

Ingredients:

  • 1 pound lean ground turkey or chicken
  • 1 cup cooked brown rice
  • 1 onion, finely chopped
  • 2 bell peppers, diced (use a mix of colors)
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • 1 cup reduced-fat shredded cheddar cheese

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Ground Turkey:
    • In a large skillet, cook the lean ground turkey or chicken over medium-high heat until browned. Drain any excess fat.
  3. Add Vegetables:
    • Add the chopped onion, diced bell peppers, and minced garlic to the skillet with the cooked ground meat. Cook for a few minutes until the vegetables are softened.
  4. Season:
    • Stir in the diced tomatoes (with their juice), tomato sauce, dried oregano, dried basil, salt, and black pepper. Allow the mixture to simmer for 5-7 minutes.
  5. Combine with Rice:
    • In a large mixing bowl, combine the cooked brown rice with the meat and vegetable mixture. Mix well.
  6. Transfer to Casserole Dish:
    • Transfer the mixture to a 9×13-inch baking dish sprayed with cooking spray.
  7. Top with Cheese:
    • Sprinkle the shredded cheddar cheese over the top of the casserole.
  8. Bake:
    • Bake in the preheated oven for about 25-30 minutes or until the cheese is melted and bubbly.
  9. Serve:
    • Remove from the oven and let it cool slightly before serving.
