Ingredients:

  • 9 whole wheat or low-carb lasagna noodles
  • 1 lb lean ground turkey or chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook Noodles:
    • Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. Cook Ground Turkey and Vegetables:
    • In a large skillet, cook the ground turkey or chicken over medium heat until browned. Add the chopped onion, minced garlic, diced bell pepper, and grated zucchini. Cook until the vegetables are softened.
  4. Add Tomato Sauce and Seasonings:
    • Add crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Stir well and let it simmer for a few minutes to allow the flavors to meld.
  5. Layer Lasagna:
    • In a baking dish, spread a thin layer of the tomato and meat mixture. Place a layer of cooked lasagna noodles on top. Repeat layers, finishing with a layer of tomato and meat mixture.
  6. Combine Cheeses:
    • In a bowl, mix together ricotta cheese, shredded mozzarella cheese, and grated Parmesan cheese.
  7. Top with Cheese Mixture:
    • Spoon the cheese mixture evenly over the top layer of lasagna.
  8. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  9. Garnish and Serve:
    • Garnish with fresh basil or parsley if desired. Let it cool for a few minutes before slicing and serving.
