- 2 large ripe bananas (about 1 cup mashed)
- 2 cups all-purpose flour
- 1/2 cup unsweetened applesauce
- 1/2 cup plain non-fat Greek yogurt
- 1/2 cup granulated sugar substitute (like Stevia or Splenda)
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- Cooking spray (for greasing the pan)
Instructions:
- Preheat your oven to 350°F (175°C). Spray a 9×5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.
- In a medium-sized bowl, mash the ripe bananas until smooth.
- In another bowl, combine the flour, baking soda, and salt.
- In a separate large mixing bowl, blend together the mashed bananas, unsweetened applesauce, Greek yogurt, sugar substitute, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.
- Pour the batter into the prepared loaf pan, spreading it out evenly.
- Bake in the preheated oven for approximately 45-55 minutes or until a toothpick inserted into the center comes out clean and the bread is golden brown.
- Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once completely cooled, slice into 12 even servings.
