WEIGHT WATCHERS ONE POINT BANANA BREAD

Ingredients:

  • 2 large ripe bananas (about 1 cup mashed)
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup granulated sugar substitute (like Stevia or Splenda)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Cooking spray (for greasing the pan)

Instructions:

  1. Preheat your oven to 350°F (175°C). Spray a 9×5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.
  2. In a medium-sized bowl, mash the ripe bananas until smooth.
  3. In another bowl, combine the flour, baking soda, and salt.
  4. In a separate large mixing bowl, blend together the mashed bananas, unsweetened applesauce, Greek yogurt, sugar substitute, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.
  6. Pour the batter into the prepared loaf pan, spreading it out evenly.
  7. Bake in the preheated oven for approximately 45-55 minutes or until a toothpick inserted into the center comes out clean and the bread is golden brown.
  8. Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. Once completely cooled, slice into 12 even servings.
