Weight Watchers Parmesan Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup plain non-fat Greek yogurt
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Cooking spray

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a bowl, mix together the Greek yogurt, grated Parmesan cheese, garlic powder, onion powder, dried oregano, and dried basil.
  4. Coat each chicken breast with the yogurt and Parmesan mixture, ensuring they are well covered.
  5. Place the coated chicken breasts on a baking sheet sprayed with cooking spray.
  6. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.
  7. If you like, you can broil the chicken for an additional 2-3 minutes to achieve a crispier top.
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
  9. Serve the Parmesan chicken with your favorite vegetables or a side salad.
