Weight Watchers Pasta Salad

Ingredients:

  • 8 oz whole wheat or multigrain pasta (cooked and cooled)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons black olives, sliced
  • 2 tablespoons reduced-fat feta cheese, crumbled
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped

Dressing:

  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Cook Pasta:
    • Cook the pasta according to package instructions. Drain, rinse with cold water, and let it cool.
  2. Prepare Vegetables:
    • In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, black olives, feta cheese, basil, and parsley.
  3. Make Dressing:
    • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper. Adjust the dressing to taste.
  4. Combine:
    • Add the cooled pasta to the bowl with vegetables.
  5. Dress the Salad:
    • Pour the dressing over the pasta and vegetables. Toss everything together until well coated.
  6. Chill:
    • Cover the bowl with plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld.
  7. Serve:
    • Before serving, check the seasoning and adjust if necessary. You can garnish with additional fresh herbs if desired.
