- 2 tablespoons powdered sugar or a sugar substitute
- 1/4 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons melted coconut oil
Instructions:
- Prepare the peanut butter mixture:
- In a mixing bowl, combine the powdered peanut butter and water until it forms a thick paste.
- Add the powdered sugar (or sugar substitute), cocoa powder, vanilla extract, and a pinch of salt. Mix until well combined.
- Prepare the chocolate coating:
- Melt the coconut oil in the microwave or on the stovetop until it’s completely liquid.
- Assemble the peanut butter cups:
- Line a mini muffin tin with paper liners.
- Spoon a small amount of the melted coconut oil into the bottom of each paper liner, just enough to cover the bottom.
- Layering:
- Place a small amount (about 1 teaspoon) of the peanut butter mixture on top of the coconut oil in each liner, spreading it out evenly.
- Final layer:
- Pour the remaining melted coconut oil over the peanut butter mixture in each cup, ensuring it covers the peanut butter layer completely.
- Chill and set:
- Place the muffin tin in the refrigerator for at least 30 minutes or until the peanut butter cups are firm.
- Serve:
- Once set, remove the peanut butter cups from the muffin tin and enjoy! Store any leftovers in the refrigerator.
