Weight watchers shrimp bowls

Ingredients:

For the Shrimp:
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and black pepper, to taste
  • Fresh lemon juice (optional)
For the Bowls:
  • 2 cups cooked brown rice or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Lime wedges for serving
For the Dressing (Optional):
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions:

  1. Prepare Shrimp:
    • In a bowl, toss the shrimp with olive oil, minced garlic, paprika, cumin, salt, and black pepper. Let it marinate for at least 15 minutes.
  2. Cook Shrimp:
    • Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side or until they are opaque and cooked through. Squeeze fresh lemon juice over the shrimp if desired.
  3. Prepare Bowls:
    • In serving bowls, assemble the cooked brown rice or cauliflower rice as the base.
  4. Add Toppings:
    • Top the rice with cooked shrimp, cherry tomatoes, diced cucumber, sliced avocado, chopped cilantro, and crumbled feta cheese if using.
  5. Make Dressing (Optional):
    • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper to make a simple dressing.
  6. Drizzle Dressing:
    • Drizzle the dressing over the shrimp bowls or serve it on the side.
  7. Serve:
    • Garnish the bowls with lime wedges and serve immediately.
