Weight Watchers  Spinach Feta Stuffed Crescents

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup firm tofu, crumbled
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • 2 tubes (8 ounces each) reduced-fat crescent roll dough
  • 1/2 cup vegan feta cheese, crumbled
  • Cooking spray

Instructions:

  1. Preheat the oven according to the crescent roll package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
  3. Add chopped spinach to the skillet and cook until wilted. Remove any excess liquid.
  4. In a large bowl, combine the crumbled tofu, nutritional yeast, lemon juice, sautéed spinach mixture, salt, and pepper. Mix well.
  5. Unroll the crescent roll dough and separate it into triangles.
  6. Spoon the spinach-tofu mixture onto the wide end of each crescent triangle. Sprinkle vegan feta cheese on top.
  7. Roll up the crescents, starting from the wide end, and place them on a baking sheet sprayed with cooking spray.
  8. Bake according to the crescent roll package instructions or until golden brown.
