Weight Watchers Spinach Feta Stuffed Crescents

Ingredients:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1 cup firm tofu, crumbled
- 1 tablespoon nutritional yeast
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 2 tubes (8 ounces each) reduced-fat crescent roll dough
- 1/2 cup vegan feta cheese, crumbled
- Cooking spray
Instructions:
- Preheat the oven according to the crescent roll package instructions.
- In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sauté until softened.
- Add chopped spinach to the skillet and cook until wilted. Remove any excess liquid.
- In a large bowl, combine the crumbled tofu, nutritional yeast, lemon juice, sautéed spinach mixture, salt, and pepper. Mix well.
- Unroll the crescent roll dough and separate it into triangles.
- Spoon the spinach-tofu mixture onto the wide end of each crescent triangle. Sprinkle vegan feta cheese on top.
- Roll up the crescents, starting from the wide end, and place them on a baking sheet sprayed with cooking spray.
