Weight Watchers Strawberry Creamsicle Fat Bombs

Ingredients:

  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup unsweetened coconut milk (canned)
  • 1/4 cup coconut oil, melted
  • 1/4 cup fat-free Greek yogurt
  • 1 teaspoon vanilla extract
  • Zest of one orange (optional)
  • Sweetener to taste (such as Stevia or another sugar substitute)

Instructions:

  1. Blend Ingredients:
    • In a blender or food processor, combine the fresh strawberries, coconut milk, melted coconut oil, fat-free Greek yogurt, vanilla extract, and orange zest (if using). Blend until smooth.
  2. Sweeten to Taste:
    • Add your preferred sweetener to the mixture, adjusting to your desired level of sweetness. Keep in mind that the sweetness may vary based on personal preference and the natural sweetness of the strawberries.
  3. Pour into Molds:
    • Pour the strawberry creamsicle mixture into silicone molds or an ice cube tray.
  4. Freeze:
    • Place the molds in the freezer and let them set for at least 3-4 hours or until completely frozen.
  5. Serve:
    • Once frozen, remove the fat bombs from the molds and store them in an airtight container in the freezer until ready to serve.
