“Weight Watchers’ Sweet Hawaiian Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey (you can use a sugar-free substitute for fewer points)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Chopped green onions and sesame seeds for garnish (optional)

Instructions:

  1. Prepare the Marinade:
    • In a bowl, mix together the pineapple juice, low-sodium soy sauce, honey, minced garlic, and grated ginger.
  2. Marinate the Chicken:
    • Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them, making sure they are well coated. Marinate in the refrigerator for at least 30 minutes, or ideally, up to 4 hours, for better flavor.
  3. Cook the Chicken:
    • Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
    • Season the chicken breasts with salt and pepper. Grill the chicken for about 6-8 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
  4. Make the Sauce:
    • While the chicken is cooking, prepare the sauce. In a small saucepan, combine the remaining marinade from the bag (if any) with cornstarch and water. Stir well to dissolve the cornstarch.
    • Bring the mixture to a simmer over medium heat, stirring constantly until it thickens into a sauce. Once thickened, remove it from heat.
  5. Serve
