- 1 lb lean ground turkey or chicken
- 1 packet low-sodium taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 cup salsa (choose a low-sugar and low-point option)
- 1 cup reduced-fat shredded cheddar cheese
- 4 whole wheat tortillas
- Cooking spray
Optional Toppings:
- Diced tomatoes
- Shredded lettuce
- Sliced green onions
- Fat-free Greek yogurt or light sour cream
- Chopped fresh cilantro
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground turkey or chicken over medium heat until fully cooked. Drain any excess fat.
- Add the taco seasoning to the cooked meat according to the package instructions.
- Stir in the black beans, corn, and salsa. Cook for an additional 2-3 minutes until the mixture is heated through.
- Lightly coat a casserole dish with cooking spray.
- Place two tortillas in the bottom of the casserole dish, overlapping them if needed.
- Spoon half of the meat mixture over the tortillas and spread it evenly.
- Sprinkle half of the shredded cheese over the meat mixture.
- Repeat the layers with the remaining tortillas, meat mixture, and cheese.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Allow the casserole to cool for a few minutes before slicing.
- Serve with your favorite toppings, such as diced tomatoes, shredded lettuce, green onions, Greek yogurt, or cilantro.
