Weight Watchers Taco Casserole

Ingredients:

  • 1 lb extra-lean ground turkey or chicken
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 packet taco seasoning (low-sodium)
  • 1 cup salsa (choose a lower-calorie option)
  • 1 cup fat-free Greek yogurt
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro (optional)
  • Cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease a casserole dish with cooking spray.
  2. Cook Ground Turkey or Chicken:
    • In a large skillet, cook the ground turkey or chicken over medium heat until browned. Drain any excess fat.
  3. Add Vegetables:
    • Add chopped onion and diced bell pepper to the skillet. Cook for 5-7 minutes, or until vegetables are softened.
  4. Season:
    • Stir in the black beans, corn, and taco seasoning. Cook for an additional 2-3 minutes.
  5. Layer Casserole:
    • Transfer the meat and vegetable mixture to the prepared casserole dish, spreading it evenly.
  6. Combine Salsa and Greek Yogurt:
    • In a bowl, mix together salsa and fat-free Greek yogurt. Spread this mixture over the meat and vegetable layer.
  7. Top with Cheese:
    • Sprinkle the reduced-fat shredded cheddar cheese over the salsa and yogurt layer.
  8. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish and Serve:
    • Remove from the oven and top with halved cherry tomatoes and chopped cilantro, if desired.
