Ingredients:

  • 1 pound lean ground turkey or chicken
  • 1 packet low-sodium taco seasoning
  • 1 cup salsa
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded reduced-fat cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 cup fat-free Greek yogurt or light sour cream (for topping)
  • Whole-grain tortilla chips (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey or chicken over medium heat until browned. Drain any excess fat.
  3. Add the taco seasoning and follow the package instructions, typically adding water and simmering until the mixture thickens.
  4. In a large mixing bowl, combine the cooked meat mixture, salsa, black beans, corn, and diced tomatoes. Mix well.
  5. Transfer the mixture to a baking dish sprayed with non-stick cooking spray.
  6. Sprinkle the shredded cheddar cheese over the top.
  7. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
