  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups whole wheat egg noodles
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat olive oil over medium heat. Add chopped onion, sliced carrots, sliced celery, and minced garlic. Sauté until the vegetables are tender.
  2. Add Chicken:
    • Add diced chicken to the pot and cook until it’s no longer pink.
