Weight Watchers Unstuffed Cabbage Rolls

Ingredients:

  • 1 lb lean ground turkey or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage, shredded
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1/2 cup uncooked brown rice
  • 1 cup beef or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, brown the ground turkey or beef over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened.
  3. Stir in the shredded cabbage and continue to cook until the cabbage wilts.
  4. Add the diced tomatoes, tomato sauce, uncooked brown rice, beef or vegetable broth, paprika, dried oregano, salt, and pepper. Mix well.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let it cook for about 20-25 minutes or until the rice is cooked and the flavors are well combined. Stir occasionally.
  6. Adjust the seasoning if needed. If the mixture appears dry, you can add a little more broth.
  7. Garnish with fresh parsley if desired.
  8. Serve the Unstuffed Cabbage Rolls hot.
