Ingredients:
- 1 lb lean ground turkey or beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 small head of cabbage, shredded
- 1 can (14 oz) diced tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 1/2 cup uncooked brown rice
- 1 cup beef or vegetable broth
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- In a large skillet, brown the ground turkey or beef over medium heat. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is softened.
- Stir in the shredded cabbage and continue to cook until the cabbage wilts.
- Add the diced tomatoes, tomato sauce, uncooked brown rice, beef or vegetable broth, paprika, dried oregano, salt, and pepper. Mix well.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let it cook for about 20-25 minutes or until the rice is cooked and the flavors are well combined. Stir occasionally.
- Adjust the seasoning if needed. If the mixture appears dry, you can add a little more broth.
- Garnish with fresh parsley if desired.
- Serve the Unstuffed Cabbage Rolls hot.
