  • 1 cup reduced-fat shredded Mexican cheese blend
  • 1 bell pepper, thinly sliced (any color)
  • 1 small red onion, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon olive oil
  • 1 teaspoon taco seasoning (low-sodium)
  • Cooking spray
  • Salsa and fat-free Greek yogurt (optional, for serving)

Instructions:

  1. Prepare Vegetables:
    • In a skillet, heat olive oil over medium heat. Add sliced bell pepper, red onion, and zucchini. Cook until vegetables are tender-crisp. Stir in taco seasoning and cherry tomatoes, cooking for an additional 1-2 minutes. Remove from heat.
