Ingredients:
2 tbsp olive oil
1 medium onion, finely diced
2-3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 tsp dried thyme
1/2 tsp dried rosemary
1/4 tsp red pepper flakes (optional)
4 cups vegetable or chicken broth
2 cans (15 oz each) white beans, drained and rinsed
1 bay leaf
Salt and pepper, to taste
2 cups fresh spinach or kale, chopped (optional)
Juice of 1/2 lemon
Fresh parsley or basil, chopped, for garnish
Grated Parmesan cheese (optional)

Instructions:
Sauté the Vegetables
Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, cooking until they soften, about 5-7 minutes. Add the garlic and cook for another minute, until fragrant.
Season the Base
Stir in the thyme, rosemary, and red pepper flakes (if using), cooking for an additional minute to bloom the flavors.
Add Broth and Beans

Optional: Blend for Creaminess
For a creamier consistency, remove about a third of the soup and blend it until smooth, then return it to the pot. Stir well to combine
