Soul Food


1 whole chicken of 1.5 kilos (without giblets)
Salt and ground black pepper to taste
1 tablespoon onion powder, or to taste
1/2 cup of margarine
1 stick of celery without leaves
1. Preheat oven to 350°F (180°C).
2. Place chicken in a baking dish or dish, and season inside and out with a generous amount of salt and pepper.  Sprinkle the onion powder inside and out.  Place 3 tablespoons of the margarine inside the chicken, and arrange bits of the remaining margarine on the skin of the chicken.  Cut the celery into 3 or 4 pieces, and place inside the chicken.
3. Bake uncovered for 1 hour and 15 minutes in the preheated oven, or until fully cooked.  Get out of the oven and cover with the melted margarine.  Cover with aluminum foil and let rest for 30 minutes before cutting and serving.
