WW MARRY ME CHICKEN

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup reduced-sodium chicken broth
  • 1/2 cup fat-free Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Fresh basil, chopped, for garnish (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Season Chicken:
    • Season chicken breasts with salt and pepper on both sides.
  3. Sear Chicken:
    • In an oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts until golden brown on both sides. Remove the chicken from the skillet and set aside.
  4. Prepare Sauce:
    • In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add cherry tomatoes, chicken broth, Greek yogurt, Parmesan cheese, dried oregano, and dried thyme. Stir to combine.
  5. Return Chicken:
    • Return the seared chicken breasts to the skillet, spooning some of the sauce over them.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
  7. Garnish and Serve:
    • Garnish with fresh basil if desired. Serve the chicken over cooked pasta, rice, or steamed vegetables
