WW Peanut Butter Balls

Ingredients:

For the Peanut Butter Balls:

  • 1 cup reduced-fat creamy peanut butter (use a lower-calorie peanut butter)
  • 1/2 cup powdered peanut butter (like PB2)
  • 1/3 cup sticky sweetener of choice (e.g., sugar-free syrup, honey for non-keto)
  • 1 tsp vanilla extract
  • A pinch of salt

For the Chocolate Coating:

  • 1 cup sugar-free chocolate chips (use sugar-free chocolate for a lower-calorie option)

Instructions:

  1. Line a large plate or tray with parchment paper and set it aside.
  2. In a mixing bowl, combine the reduced-fat peanut butter, powdered peanut butter (like PB2), sticky sweetener of choice, vanilla extract, and a pinch of salt. Mix until the ingredients are fully combined. If the batter is too thick and crumbly, add some liquid (water or milk) slowly until a thick, formable batter remains.
  3. Using your hands, form small balls with the peanut butter mixture and place them on the lined plate or tray. Freeze for about 10 minutes to firm them up.
  4. While the peanut butter balls are in the freezer, melt your sugar-free chocolate chips.
  5. Remove the peanut butter balls from the freezer and, using two forks, dip each ball in the melted chocolate until completely covered. Repeat until all the balls are covered in chocolate.
  6. Refrigerate the chocolate-covered peanut butter balls for about 20 minutes, or until the chocolate coating has firmed up.
