Ingredients:

  • 1 cup natural peanut butter (smooth or crunchy)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (dark or semi-sweet, or sugar-free for WW-friendly)
  • 1 tablespoon coconut oil (optional, for melting the chocolate)

Instructions:

  1. Prepare a Pan: Line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Make the Base:
    • In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract.
    • Stir together until smooth and well combined.
  3. Add Oats:
    • Add the rolled oats and salt to the peanut butter mixture. Stir until the oats are fully coated with the peanut butter mixture. The mixture should be thick and sticky.
  4. Press into Pan:
    • Transfer the oat and peanut butter mixture into the prepared baking pan.
    • Press it evenly into the pan to form a compact base. Use a spatula or the back of a spoon to press down firmly.
      1. Melt the Chocolate:
        • In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using).
        • Microwave in 30-second intervals, stirring after each, until fully melted and smooth.
      2. Spread Chocolate on Top:
        • Pour the melted chocolate over the pressed peanut butter and oat base.
        • Spread the chocolate evenly with a spatula.
      3. Chill:
        • Refrigerate the bars for at least 2-3 hours, or until they are firm and set.
      4. Cut and Serve:
        • Once the bars are set, remove them from the refrigerator.
        • Lift them out of the pan using the parchment paper and cut them into squares or bars.

      Storage:

      • Store the bars in an airtight container in the refrigerator for up to 1-2 weeks. You can also freeze them for longer storage, up to 3 months.
