Zero Point Chicken Stir-Fry

 

Ingredients:-

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tablespoon low-sodium soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional – it does add flavor but has points in Weight Watchers)
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:-

  1. In a large non-stick skillet or wok over medium-high heat, add the sliced chicken and cook until it’s no longer pink. Remove the cooked chicken from the pan and set it aside.
  2. In the same skillet, add the garlic and stir-fry for about 30 seconds until fragrant. Then add in the broccoli, bell peppers, snap peas, carrots, and mushrooms. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  3. Return the cooked chicken to the skillet with the vegetables.
  4. In a small bowl, mix together the soy sauce, rice vinegar, and sesame oil (if using). Pour this sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped green onions if desired and serve hot….
