Ingredients:
- 3 medium ripe tomatoes (cut into wedges)
- 1 large cucumber (sliced into half-moons)
- 1 small red onion (thinly sliced)
- 1 green bell pepper (sliced into rings or strips)
- Β½ cup Kalamata olives (pitted)
- 200g (7 oz) block of feta cheese (traditional Greek-style, not crumbled)
- ΒΌ cup extra virgin olive oil
- 1 tbsp red wine vinegar (optional, for tanginess)

- Salt & black pepper to taste
Instructions:
- Prepare the Vegetables

- Add Olives & Feta
