Ingredients:

  • 3 medium ripe tomatoes (cut into wedges)
  • 1 large cucumber (sliced into half-moons)
  • 1 small red onion (thinly sliced)
  • 1 green bell pepper (sliced into rings or strips)
  • Β½ cup Kalamata olives (pitted)
  • 200g (7 oz) block of feta cheese (traditional Greek-style, not crumbled)
  • ΒΌ cup extra virgin olive oil
  • 1 tbsp red wine vinegar (optional, for tanginess)
  • 1 tsp dried oregano
  • Salt & black pepper to taste

Instructions:

  1. Prepare the Vegetables
    • Wash and chop tomatoes, cucumber, onion, and bell pepper. Place in a large salad bowl.
  2. Add Olives & Feta
    • Add the Kalamata olives. Place the block of feta cheese on top (or cut into thick slices).
  3. Make the Dressing
    • In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Assemble the Salad
    • Drizzle the dressing over the salad.
    • Sprinkle extra oregano over the feta for that authentic Greek touch.
