Ingredients:
- 4 large eggs
- 1/4 cup fat-free Greek yogurt
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions
- 1/4 cup diced tomatoes
- 1/4 cup diced lean turkey sausage (cooked)
- 1/4 cup diced reduced-fat cheddar cheese
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or use silicone muffin cups for easy removal.
- In a mixing bowl, whisk together the eggs and Greek yogurt until well combined. This will make your egg bites creamy and fluffy.
- Season the egg mixture with a pinch of salt and pepper.
- Evenly distribute the diced bell peppers, onions, tomatoes, turkey sausage, and cheddar cheese among the muffin cups.
- Pour the egg mixture over the ingredients in each muffin cup, filling them about 3/4 of the way full. Leave a little space at the top as they will puff up when baking.
- Gently stir the ingredients in each muffin cup to ensure even distribution.
- Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the egg bites are set and slightly golden on top.
- Once done, remove the egg bites from the oven and allow them to cool slightly in the muffin tin.
- Carefully remove the Tex Mex Egg Bites from the muffin tin, using a knife or spoon to help release them if needed.
- Serve warm or store in an airtight container in the refrigerator for a quick and healthy breakfast option
