10 Minute Roasted Chicken and Vegetable in air fryer

10 Minute Roasted Chicken and Vegetable in air fryer

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 cups of your favorite vegetables (e.g., broccoli, carrots, bell peppers, zucchini)
  • 2 tablespoons of olive oil
  • 1 teaspoon of your preferred seasoning blend (e.g., Italian seasoning, paprika, garlic powder)
  • Salt and pepper to taste

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for a few minutes.
  2. While the air fryer is preheating, prepare the chicken and vegetables. Cut the chicken breasts into smaller, evenly-sized pieces to ensure they cook evenly. Cut the vegetables into bite-sized pieces as well.
  3. In a large bowl, toss the chicken and vegetables with olive oil. Season them with your preferred seasoning blend, salt, and pepper. Make sure everything is well coated.
  4. Place the chicken and vegetables in the air fryer basket in a single layer, ensuring they are not overcrowded. You may need to cook them in batches if your air fryer is small.
  5. Cook at 375°F (190°C) for about 8-10 minutes, shaking or stirring the contents halfway through the cooking time to ensure even cooking. Cooking times may vary depending on the size and thickness of your chicken pieces and the specific air fryer model you have, so use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
  6. Once the chicken is cooked through and the vegetables are tender and slightly crispy, remove them from the air fryer. Serve immediately.
  7. Feel free to garnish with fresh herbs or a squeeze of lemon for extra flavor.
