FARMER’S CASSEROLE

Ingredients:

  • 6 large eggs
  • 2 cups shredded cheddar cheese
  • 2 cups frozen hash brown potatoes (thawed)
  • 1 cup cooked and crumbled breakfast sausage or bacon (optional)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, whisk the eggs and milk together. Season with salt and pepper to taste.
  3. Spread the thawed hash brown potatoes evenly in the prepared baking dish.
  4. Add the diced bell peppers and onions over the potatoes.
  5. If you’re using sausage or bacon, sprinkle it over the vegetables.
  6. Spread 1 1/2 cups of shredded cheddar cheese over the other ingredients in the dish.
  7. Pour the egg and milk mixture over the entire casserole.
  8. Top with the remaining 1/2 cup of cheddar cheese.
  9. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  10. After 45 minutes, remove the foil and bake for an additional 15-20 minutes or until the casserole is set and the top is golden brown.
  11. Let it cool for a few minutes before serving.
