VEGAN TOFU BURRITOS

Ingredients:
1 package firm tofu, drained and pressed
1 tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
4 large flour tortillas
1 cup cooked brown rice
1 can black beans, drained and rinsed
1/2 cup salsa
1/2 cup vegan sour cream
1/2 cup shredded vegan cheese
1 avocado, sliced
Cilantro, chopped (optional)
Instructions:
Preheat the oven to 375°F.
In a large skillet, heat the olive oil over medium heat. Crumble the tofu into the skillet and add the chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the tofu is lightly browned.
Lay the tortillas on a flat surface. Divide the rice, black beans, and tofu evenly among the tortillas.
Top each burrito with salsa, vegan sour cream, vegan cheese, and sliced avocado.
Fold in the sides of the tortilla and then roll it up tightly.
Place the burritos seam-side down on a baking sheet and bake for 10-15 minutes, until the tortillas are lightly browned and crispy.
