AIR FRYER BLUEBERRY MUFFINS

INGREDIENTS

  • 1 cup all-purpose flour
  • teaspoon baking powder
  • ¼ teaspoon cinnamon
  • 2 tablespoons granulated sugar
  •  cup milk
  • 3 tablespoons salted butter melted and cooled
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup fresh blueberries

Topping

  • 2 tablespoons brown sugar
  • 2 tablespoons sugar
  • 2 tablespoons all-purpose flour –
  • 2 tablespoons cold butter cut into small pieces

INSTRUCTIONS

  • Get out and measure your ingredients.
  • In a large mixing bowl, combine the sugar, eggs, vanilla, milk and melted butter until well mixed.
  • Add the flour, baking powder and cinnamon and mix with a spatula or wooden spoon only until combined.
  • Add the blueberries and gently fold to disperse in the batter.
  • Prepare baking pan with cooking spray. Fill the silicone baking cups about ⅔ full with batter.
  • Prepare sugars, flour and butter in a small bowl. Use a fork and mix until crumbs. Place on top of each muffin.
  • Place the filled baking cups in the air fryer basket.
Cook on the air fry setting at 320F for 12-14 minutes, or until the blueberry muffins are fully cooked and a toothpick inserted in the center comes out clean
Allow the muffins to cool slightly before serving. Enjoy every bite!
