Air Fryer Buffalo Chicken Meatballs

Ingredients:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (you can use Panko or regular breadcrumbs)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup hot sauce (such as Frank’s RedHot or your favorite brand)
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray (for the air fryer basket)

For the buffalo sauce:

  • 1/4 cup hot sauce
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic powder

Instructions:

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped celery, chopped onion, minced garlic, 1/4 cup of hot sauce, egg, salt, and black pepper. Mix everything together until well combined.
  2. Form the mixture into meatballs, about 1 to 1.5 inches in diameter. You can use your hands or a small scoop to make even-sized meatballs.
  3. Preheat your air fryer to 375°F (190°C).
  4. Lightly spray the air fryer basket with cooking spray to prevent sticking.
  5. Place the meatballs in the air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.
  6. Cook the meatballs in the air fryer for 12-15 minutes, or until they are cooked through and have a crispy, golden-brown exterior. You can shake the basket or flip the meatballs halfway through to ensure even cooking.
  7. While the meatballs are cooking, prepare the buffalo sauce by mixing 1/4 cup of hot sauce, melted butter, and garlic powder in a small bowl.
  8. Once the meatballs are cooked, remove them from the air fryer and toss them in the buffalo sauce until they are well coated.
  9. Serve the buffalo chicken meatballs with celery sticks and your favorite dipping sauce (such as ranch or blue cheese dressing) for a classic buffalo wing flavor.
