Ingredients:
- 1 pound ground chicken
- 1/2 cup breadcrumbs (you can use Panko or regular breadcrumbs)
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup hot sauce (such as Frank’s RedHot or your favorite brand)
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray (for the air fryer basket)
For the buffalo sauce:
- 1/4 cup hot sauce
- 2 tablespoons melted butter
- 1/2 teaspoon garlic powder
Instructions:
- In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped celery, chopped onion, minced garlic, 1/4 cup of hot sauce, egg, salt, and black pepper. Mix everything together until well combined.
- Form the mixture into meatballs, about 1 to 1.5 inches in diameter. You can use your hands or a small scoop to make even-sized meatballs.
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the air fryer basket with cooking spray to prevent sticking.
- Place the meatballs in the air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.
- Cook the meatballs in the air fryer for 12-15 minutes, or until they are cooked through and have a crispy, golden-brown exterior. You can shake the basket or flip the meatballs halfway through to ensure even cooking.
- While the meatballs are cooking, prepare the buffalo sauce by mixing 1/4 cup of hot sauce, melted butter, and garlic powder in a small bowl.
- Once the meatballs are cooked, remove them from the air fryer and toss them in the buffalo sauce until they are well coated.
- Serve the buffalo chicken meatballs with celery sticks and your favorite dipping sauce (such as ranch or blue cheese dressing) for a classic buffalo wing flavor.
