Ingredients:
- 1 butternut squash
- 1-2 tablespoons of olive oil
- Salt and pepper to taste
- Optional seasonings (such as paprika, garlic powder, or herbs)
Instructions:
- Preheat your air fryer to 375°F (190°C) for a few minutes.
- While the air fryer is preheating, prepare the butternut squash. Wash it, then cut off both ends. Carefully peel the skin using a vegetable peeler. Once peeled, cut the squash in half lengthwise. Scoop out the seeds and stringy bits using a spoon.
- Cut each butternut squash half into smaller, equal-sized pieces. You can make them into wedges, cubes, or even just keep them as halves, depending on your preference. Make sure the pieces are small enough to fit comfortably in your air fryer basket.
- In a bowl, drizzle the butternut squash pieces with olive oil and season with salt and pepper. You can also add other seasonings or herbs of your choice at this point.
- Place the butternut squash pieces in a single layer in the air fryer basket. You may need to cook them in batches if they don’t all fit at once.
- Cook the butternut squash at 375°F (190°C) for about 15-20 minutes. You may want to shake the basket or flip the pieces halfway through to ensure even cooking.
- Check for doneness. The butternut squash should be tender and lightly browned on the outside. Cooking time may vary depending on the size and thickness of the pieces, so adjust as needed.
- Once done, remove the butternut squash from the air fryer and serve hot.
