Ingredients:
- 2 cups cooked and chilled rice (preferably day-old rice)
- 1 cup cooked chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, corn, and diced bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 cup green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions:
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, break apart the chilled rice to remove any clumps.
- Heat the vegetable oil in a large skillet or wok over medium heat. Add garlic and sauté until fragrant.
- Add the diced chicken to the skillet and cook until it’s no longer pink. Push the chicken to one side of the skillet.
- Pour the beaten eggs into the other side of the skillet and scramble them. Once the eggs are cooked, mix them with the chicken.
- Add the mixed vegetables to the skillet and stir-fry until they are tender.
- Add the chilled rice to the skillet and stir well to combine with the chicken, eggs, and vegetables.
- In a small bowl, mix soy sauce, oyster sauce, and sesame oil. Pour the sauce over the rice mixture and stir to evenly coat everything. Season with salt and pepper to taste.
- Transfer the fried rice mixture to the air fryer basket.
- Cook in the air fryer at 375°F (190°C) for about 10-12 minutes, stirring halfway through. This will give the fried rice a crispy texture.
- Once the fried rice is cooked and crispy, remove it from the air fryer. Sprinkle chopped green onions on top and serve hot.
