Air fryer Chicken Fried Rice

Ingredients:

  • 2 cups cooked and chilled rice (preferably day-old rice)
  • 1 cup cooked chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn, and diced bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large bowl, break apart the chilled rice to remove any clumps.
  3. Heat the vegetable oil in a large skillet or wok over medium heat. Add garlic and sauté until fragrant.
  4. Add the diced chicken to the skillet and cook until it’s no longer pink. Push the chicken to one side of the skillet.
  5. Pour the beaten eggs into the other side of the skillet and scramble them. Once the eggs are cooked, mix them with the chicken.
  6. Add the mixed vegetables to the skillet and stir-fry until they are tender.
  7. Add the chilled rice to the skillet and stir well to combine with the chicken, eggs, and vegetables.
  8. In a small bowl, mix soy sauce, oyster sauce, and sesame oil. Pour the sauce over the rice mixture and stir to evenly coat everything. Season with salt and pepper to taste.
  9. Transfer the fried rice mixture to the air fryer basket.
  10. Cook in the air fryer at 375°F (190°C) for about 10-12 minutes, stirring halfway through. This will give the fried rice a crispy texture.
  11. Once the fried rice is cooked and crispy, remove it from the air fryer. Sprinkle chopped green onions on top and serve hot.
