Air Fryer Chicken Fried Rice
Ingredients:
- 2 cups cooked rice (preferably chilled)
- 1 cup cooked chicken, diced
- 1/2 cup mixed vegetables (such as peas, carrots, corn)
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- Salt and pepper to taste
- Cooking spray or oil for the air fryer basket
Instructions:
- Preheat your air fryer to 370°F (187°C) for about 5 minutes.
- In a large bowl, combine the cooked rice, cooked chicken, and mixed vegetables. Set aside.
- Heat a non-stick skillet over medium heat and add a little oil. Pour in the beaten eggs and scramble them until they’re fully cooked. Remove the scrambled eggs from the skillet and set aside.
- In the same skillet, add a bit more oil if needed and sauté the minced garlic until fragrant.
- Add the rice, chicken, and vegetable mixture to the skillet with the garlic. Stir-fry for a few minutes until everything is heated through and the rice starts to get slightly crispy.
- Add the scrambled eggs back to the skillet and mix everything together.
- Drizzle the soy sauce and sesame oil over the rice mixture. Stir well to combine and season with salt and pepper to taste.
- Transfer the fried rice mixture to the air fryer basket. Spread it out evenly.
- Cook in the preheated air fryer at 370°F (187°C) for about 8-10 minutes, shaking the basket halfway through cooking, until the fried rice is heated through and slightly crispy.
- Once done, sprinkle chopped green onions over the fried rice before serving.
