Ingredients:
For the Filling:
- 10 ounces (about 2 cups) fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 egg, beaten
- Salt and pepper to taste
- A pinch of nutmeg (optional)
For the Phyllo Pastry:
- 6-8 sheets of phyllo pastry
- Olive oil or cooking spray for brushing
Instructions:
- Preheat your air fryer to 350°F (180°C) for a few minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent.
- Add the chopped spinach to the skillet and sauté until it wilts and any excess moisture evaporates. This should take about 5-7 minutes. Remove the skillet from heat and let the spinach mixture cool.
- In a mixing bowl, combine the cooled spinach mixture with the crumbled feta cheese, ricotta cheese, grated Parmesan cheese, beaten egg, salt, pepper, and a pinch of nutmeg. Mix everything well.
- Lay out one sheet of phyllo pastry and brush it with olive oil or use a cooking spray. Place another sheet on top and repeat the process until you have a stack of 2-3 sheets.
- Cut the phyllo pastry into squares or rectangles, depending on your preference and the size of your air fryer basket.
- Place a spoonful of the spinach and cheese mixture onto the center of each phyllo square.
- Fold the phyllo pastry over the filling to create triangles or rectangles, depending on your preference. Make sure to seal the edges well.
- Brush the top of each spanakopita with olive oil or use a cooking spray to ensure they turn crispy in the air fryer.
- Place the spanakopita in the air fryer basket in a single layer, making sure they don’t touch each other. You may need to cook them in batches.
- Air fry at 350°F (180°C) for about 8-10 minutes, or until they turn golden brown and crispy. Check them halfway through the cooking time and adjust if needed.
- Remove the air-fried spanakopita from the basket and let them cool for a few minutes before serving.
