Air Fryer Hasselback Potatoes

Ingredients:

 

 

  • 4 medium-sized potatoes (Yukon Gold or Russet work well)
  • 3 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme or rosemary (optional)
  • 1/2 cup shredded cheese (optional for topping)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Potatoes:
      • Preheat the air fryer to 375°F (190°C).

     

     

    • Wash and dry the potatoes. Slice thin cuts across the width of each potato, about 1/8 inch apart, stopping just before cutting through to the bottom (place the potato between two chopsticks to prevent cutting all the way through).
  2. Season:
    • Mix olive oil or melted butter with minced garlic, salt, pepper, and herbs (if using).
    • Brush the mixture generously over and between the potato slices.
  3. Cook in the Air Fryer:
    • Place the potatoes in the air fryer basket, ensuring they aren’t overcrowded.
    • Cook for 20 minutes. Check the potatoes, and brush with any remaining oil mixture if needed. Continue cooking for another 10-15 minutes until the potatoes are golden and crispy on the outside and tender inside.
  4. Optional Toppings:
    • Sprinkle shredded cheese over the potatoes during the last 5 minutes of cooking if desired.
  5. Serve:
    • Garnish with fresh parsley and serve immediately.
