Ingredients:
For the Filling:
- 1 pound ground beef or turkey
- 1 small onion, finely chopped
- 1 packet of taco seasoning mix
- 1/2 cup water
- 1 can (15 oz) refried beans
- 1 cup shredded cheddar cheese
For the Layers:
- 4 large flour tortillas
- 1 cup sour cream
- 1 cup salsa
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup sliced black olives
- 1 cup diced green onions
- 1 cup shredded cheddar cheese
- 1 cup guacamole
- 1 cup sliced jalapeños (optional for heat)
Instructions:
- In a large skillet, brown the ground beef or turkey over medium-high heat. Add the chopped onion and cook until it’s translucent.
- Stir in the taco seasoning mix and water. Cook according to the package instructions until the mixture thickens. Remove from heat.
- Preheat your air fryer to 350°F (180°C).
- Assemble the layers in the air fryer basket:
- Start with a tortilla at the bottom.
- Spread a layer of refried beans on top of the tortilla.
- Add a layer of the meat mixture.
- Sprinkle a portion of shredded cheddar cheese.
- Place another tortilla on top and repeat the layers until you’ve used all the filling and tortillas, ending with a tortilla on top.
- Place the layered cake into the preheated air fryer. Cook for about 10-12 minutes or until it’s heated through and the cheese is melted and bubbly.
- Carefully remove the taco pie cake from the air fryer and let it cool slightly before transferring it to a serving platter.
- Once the taco pie cake has cooled a bit, you can add the cold toppings. Spread a layer of sour cream over the top, followed by salsa, lettuce, tomatoes, black olives, green onions, cheddar cheese, guacamole, and jalapeños (if desired).
- Slice and serve your layered taco pie cake as you would a regular cake. Enjoy!
