Air Fryer Lemon Drizzle Cake
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup vegetable oil or melted butter
- 1/4 cup milk
- 1 large egg
- Zest of 1 lemon
- Juice of 1 lemon (for the drizzle)
- 1/2 cup powdered sugar (for the drizzle)
Instructions:
For the Cake:
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the vegetable oil (or melted butter), milk, egg, and lemon zest until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Pour the batter into a greased and floured cake pan that fits into your air fryer basket. Smooth the top with a spatula.
For the Air Frying:
- Preheat your air fryer to 320°F (160°C).
- Place the cake pan into the air fryer basket. If your air fryer doesn’t have enough space, you may need to use a smaller cake pan or ramekin that fits.
- Air fry the cake for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Once the cake is done, remove it from the air fryer and let it cool in the pan for a few minutes.
For the Lemon Drizzle:
- While the cake is cooling, prepare the lemon drizzle by mixing the lemon juice and powdered sugar until smooth. Adjust the consistency by adding more lemon juice or powdered sugar if needed.
- Prick the surface of the warm cake with a fork or toothpick, then pour the lemon drizzle over the cake, allowing it to soak in.
- Let the cake cool completely before slicing and serving.
