Air Fryer Mediterranean Chickpeas

INGREDIENTS:

2 cans (15 oz each) chickpeas, drained and rinsed
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
Salt and pepper to taste
Optional: Red pepper flakes for a bit of heat
Fresh parsley, chopped, for garnish
Lemon wedges for serving

INSTRUCTIONS:

Preheat the Air Fryer:Preheat your air fryer to 400°F (200°C).
Prepare Chickpeas:Pat the chickpeas dry with a paper towel to remove excess moisture. In a bowl, combine chickpeas with olive oil, cumin, smoked paprika, garlic powder, coriander, oregano, salt, and pepper. Toss well to coat evenly.
Air Fry the Chickpeas:Place the seasoned chickpeas in the air fryer basket in a single layer. Cook for 15-20 minutes, shaking the basket halfway through to ensure even cooking. The chickpeas should be golden brown and crispy.
Serve:Remove the chickpeas from the air fryer and transfer them to a serving bowl. If desired, sprinkle with red pepper flakes for some heat. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
