Air Fryer Parmesan Roasted Potatoes

Ingredients:

  • 1.5 pounds (about 680g) of small potatoes (red or gold potatoes work well)
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or your preferred herbs)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Start by washing and scrubbing the potatoes to remove any dirt. You can leave the skin on for added texture and flavor.
  2. Cut the potatoes into bite-sized pieces. Try to make them as uniform as possible to ensure even cooking. The ideal size is about 1 inch (2.5 cm) in diameter.
  3. In a large bowl, combine the potato pieces, olive oil, grated Parmesan cheese, garlic powder, dried rosemary (or other herbs of your choice), salt, and black pepper. Toss everything together to evenly coat the potatoes with the seasonings and cheese.
  4. Preheat your air fryer to 375°F (190°C).
  5. Place the seasoned potato pieces in the air fryer basket, ensuring they are in a single layer and not overcrowded. If needed, you may have to cook them in batches.
  6. Cook the potatoes in the air fryer for about 15-20 minutes. Be sure to shake the basket or toss the potatoes with tongs every 5-10 minutes to ensure even cooking. The potatoes should be golden brown and crispy on the outside and tender on the inside.
