- 4 medium-sized tomatoes

Instructions:

- Wash and dry the tomatoes, then slice them into thick rounds, about 1/2 inch (1.3 cm) thick.
- In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, dried Italian herbs, salt, and pepper. Mix well.
- Brush both sides of the tomato slices with olive oil.
- Dip each tomato slice into the breadcrumb mixture, pressing the mixture onto the tomato to adhere. Make sure both sides are evenly coated with the breadcrumb mixture.
- Lightly grease the air fryer basket with cooking spray to prevent sticking.
- Place the coated tomato slices in a single layer in the air fryer basket. You may need to do this in batches if your air fryer basket is small to avoid overcrowding.
- Air fry the tomatoes at 375°F (190°C) for 8-10 minutes, or until they are golden brown and crispy. The exact cooking time may vary depending on your air fryer, so keep an eye on them to prevent burning.
- Once the tomatoes are crispy and the cheese is melted and browned, remove them from the air fryer.
- Serve the air-fried Parmesan tomatoes hot as a side dish or appetizer. You can garnish them with fresh herbs or a drizzle of balsamic glaze if you like.
