Air fryer parmesan tomatoes

Ingredients:

  • 4 medium-sized tomatoes
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (you can use Panko breadcrumbs for extra crunch)
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (or a blend of oregano, basil, and thyme)
  • Salt and pepper, to taste
  • Cooking spray (for the air fryer basket)

Instructions:

  1. Preheat your air fryer to 375°F (190°C) for a few minutes.
  2. Wash and dry the tomatoes, then slice them into thick rounds, about 1/2 inch (1.3 cm) thick.
  3. In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, dried Italian herbs, salt, and pepper. Mix well.
  4. Brush both sides of the tomato slices with olive oil.
  5. Dip each tomato slice into the breadcrumb mixture, pressing the mixture onto the tomato to adhere. Make sure both sides are evenly coated with the breadcrumb mixture.
  6. Lightly grease the air fryer basket with cooking spray to prevent sticking.
  7. Place the coated tomato slices in a single layer in the air fryer basket. You may need to do this in batches if your air fryer basket is small to avoid overcrowding.
  8. Air fry the tomatoes at 375°F (190°C) for 8-10 minutes, or until they are golden brown and crispy. The exact cooking time may vary depending on your air fryer, so keep an eye on them to prevent burning.
  9. Once the tomatoes are crispy and the cheese is melted and browned, remove them from the air fryer.
  10. Serve the air-fried Parmesan tomatoes hot as a side dish or appetizer. You can garnish them with fresh herbs or a drizzle of balsamic glaze if you like.
