Air Fryer Roasted Potatoes and Bacon

Ingredients:

  • 4 cups of small potatoes (such as baby red or Yukon gold), washed and cut into bite-sized pieces
  • 4-6 slices of bacon, cut into small pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped fresh parsley, shredded cheese, or sour cream

Instructions:

  1. Preheat your air fryer to 400°F (200°C) for a few minutes.
  2. In a large mixing bowl, combine the potato pieces, olive oil, garlic powder, paprika, salt, and black pepper. Toss everything together to ensure the potatoes are evenly coated with the seasoning.
  3. Place the seasoned potatoes in the air fryer basket, making sure they are in a single layer to allow for even cooking. You may need to cook them in batches depending on the size of your air fryer.
  4. Cook the potatoes at 400°F for 15-20 minutes, shaking or stirring them halfway through the cooking time. Cooking time may vary depending on the size of your potato pieces, so keep an eye on them to ensure they reach your desired level of crispiness.
  5. While the potatoes are cooking, you can cook the bacon separately. Place the bacon pieces in a single layer in the air fryer basket or on a tray. Cook at 400°F for 5-7 minutes, or until the bacon is crispy to your liking. Be sure to check it frequently to prevent burning.
  6. Once the potatoes and bacon are both cooked, remove them from the air fryer.
  7. Mix the crispy bacon pieces with the roasted potatoes. You can also sprinkle with optional toppings like chopped fresh parsley, shredded cheese, or a dollop of sour cream.
