Ingredients:
- 4 large eggs
- 1 pound (450g) sausage meat (pork or a mix of pork and beef)
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 1 teaspoon dried herbs (such as thyme, oregano, or rosemary)
- Flour for coating (optional)
- Beaten egg for coating (optional)
- Cooking spray or oil for the air fryer basket
Instructions:
- Boil the Eggs:
- Place the eggs in a saucepan and cover them with water.
- Bring the water to a boil, then reduce the heat to a simmer and cook the eggs for about 8 minutes.
- Once done, transfer the eggs to an ice water bath to cool quickly. Peel the eggs.
- Prepare the Sausage Mixture:
- In a bowl, combine the sausage meat with breadcrumbs, dried herbs, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Assemble the Scotch Eggs:
- Divide the sausage mixture into 4 portions. Flatten each portion in your hand.
- Place a peeled boiled egg in the center and mold the sausage mixture around it, ensuring the egg is completely covered.
- Optional Coating:
- If you like, you can roll the sausage-coated eggs in flour, dip them in beaten egg, and then roll them in breadcrumbs for an extra crispy coating.
- Preheat the Air Fryer:
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Air Fry:
- Lightly grease the air fryer basket with cooking spray or oil.
- Place the Scotch eggs in the basket, making sure they are not touching.
- Air fry for about 15-20 minutes, turning them halfway through the cooking time, until the sausage is cooked through and the coating is golden brown.
- Serve:
- Allow the Scotch eggs to cool slightly before serving.
