These delicious carrots make a great side dish or addition to a tasty bowl or salad. They are vegan, gluten free, dairy free, and made healthy in the air fryer!
Ingredients
- 4-5 large carrots, peeled and cut into 2-3 inch pieces, then sliced in half lengthwise (all pieces should be similar in length and width)
- 1/2 tablespoon olive or avocado oil
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
- 1 tablespoon fresh chopped dill
Instructions

- Peel the carrots and cut them into 3 equal sections, then slice in half lengthwise to create similar sized pieces.
- Transfer carrots to a bowl and toss with oil, salt, and pepper to coat.
- Preheat the air fryer for 3 minutes at 370 degrees. Turn air fryer on, set the time to 3 minutes and the temperature to 370, then press start.
- Once heated, place the carrots in the air fryer basket (be sure not to overlap the carrots too much for more even cooking).
- Cook for 15 minutes at 400 degrees, removing the basket at the 10-minute mark to shake the basket and arrange the carrots evenly again.
- Remove the air fryer basket when the cooking time is done and transfer the carrots back to the original bowl with the oil and salt, then add in the chopped dill.
- Toss with the dill to coat then transfer hot carrots to a serving dish and enjoy immediately.
