Cinnamon-Spiced Apple Dessert Enchiladas
Ingredients:
1 (21-ounce) can apple pie filling
6 (8-inch) flour tortillas
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup water
1 teaspoon ground cinnamon
Whipped cream or vanilla ice cream (optional, for serving)
Directions:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Spoon about 1/4 cup of apple pie filling down the center of each tortilla. Roll up the tortillas and place them seam-side down in the prepared dish.
In a medium saucepan over medium heat, combine the butter, granulated sugar, brown sugar, water, and cinnamon. Bring to a boil, stirring constantly, then reduce heat and simmer for 3 minutes.
Pour the sauce evenly over the enchiladas. Let it soak into the tortillas for a few minutes before baking.
Bake uncovered for 20-25 minutes, or until the sauce is bubbling and the edges of the tortillas are golden.
Serve warm, topped with whipped cream or vanilla ice cream, if desired.
