- 2 cups Kodiak Power Cakes Mix (Buttermilk)
- 1⁄2 tsp baking powder
- 2 apples (grated)
- 1⁄2 cup Fairlife Lowfat Milk
- 1 large egg
- 1/4 cup sugar free maple syrup
- 1⁄4 cup unsweetened apple sauce
- 1⁄2 tsp cinnamon
- 1⁄2 tsp apple pie spice
- 1 tsp vanilla extract
- 2 tsp cinnamon-sugar for topping

Ingredients
- 2 cups Kodiak Power Cakes Mix (Buttermilk)
- 1⁄2 tsp baking powder
- 2 apples (grated)
- 1⁄2 cup Fairlife Lowfat Milk
- 1 large egg
- 1/4 cup sugar free maple syrup
- 1⁄4 cup unsweetened apple sauce
- 1⁄2 tsp cinnamon
- 1⁄2 tsp apple pie spice
- 1 tsp vanilla extract
- 2 tsp cinnamon-sugar for topping
Instructions
- Preheat oven and grease muffin pan: 400 degrees, rack in the center of
oven - Grease 12 standard-size muffin cups (silicone baking cups work best, do not use paper liners)
- Grate 2 apples over a large bowl. Mix in the rest of the ingredients. Take care not to over mix.
- Fill muffin cups using large ice cream scoop or spoon.
- Sprinkle it with cinnamon sugar.
Bake at 400 degrees in the middle of the oven for 10 minutes. Lower the oven temperature to 350 degrees, and bake for an additional 6-8 muffins, will be a light tan. Inserted toothpick should come out clean. - Cool muffins on wire rack.
